12 dozen cookies
Dec. 17th, 2008 03:25 pmSpent the last 4 solid hours making and then baking 12 dozen 'Scandinavian cookies' [old Swedish recipe for a walnut/butter cookie**]. Lots of work and my forearms are tired - because there's a lot of dough squeezing and dough ball rolling and squishing and then rolling in the chopped walnuts. But my, they are wonderful.
recipe for Scandinavian cookies [will make about 3 dozen; I always make 4 batches]:
preheat oven to 350 degrees
single batch
1/2 cup butter
1/4 cup brown sugar
yolk of 1 egg
1 cup flour
Mix together, then form into balls slightly larger than a marble about size of d20] and immerse in lightly whipped egg white, then roll in chopped walnuts. Place on ungreased cookie sheet and flatten by pressing indentation into cookie. Cook 15-18 minutes; cool and can store for up to 2 months.
Place a small dollop of mint or current jelly in the center indentation when served [or you can just eat them, as is].
